Parmesan-Crusted Lamb Racks

Parmesan-Crusted Lamb Racks 

Preparation time is 15 minutes , Cooking time 25 Minutes and serves 5 .

Ingredients

  • 2 tbsp honey 
  • 2 tbsp wholegrain mustard
  • 3 Lamb racks ( 4 cutlets on each rack )
  • 1/2 cup of grated Parmesan 
  • 2 garlic cloves, coarsely chopped
  • 1 tbsp chopped fresh rosemary 
  • 2 cups of panko crumbs 
  • 1 egg, lightly whisked 
  • olive oil spray 
  • salt to season 

Method 

  1. Combine the honey and mustard in a small bowl and spread evenly over the lamb. season with salt and pepper. Pre heat oven at 180 degrees
  2. Combined panko crumbs , parmesan, garlic and rosemary in a bowl , stir in the egg. Season with salt and pepper . Press Firmly over the lamb racks to evenly coat.
  3. Place lamb racks , crust side up in a large baking dish . spray with your choose of oil , and bake for 25-30 minutes for a medium  or until cooked to your liking . Transfer to a large plate  cover loosely with foil and set aside for 5 minutes to rest .
  4. Service with your favorite winter vegetables or a delicious summer salad .
